Is it possible to override "shipping method"

If not could it be added?

I used UPS for a shipment of a set - it shouldn't have gone thru as USPS - but I hadn't selected "force quote"

Also combined with that, (unless i've missed it) would there be anyway to enable tracking of different carriers, such as UPS, Fed Ex and others?

So that delivery confirmation shows up the same way as USPS does in the order detail - (nice feature BTW!)
