Shipping amount override?

If I receive an order that is outside the normal intuitive bounds of my shipping options, can I go in and manually alter the shipping amount? I assume this would only be in cases where I can get the buyer cheaper shipping. I will obviously refund the extra amount but it would help with the bookkeeping to know that I was able to reduce the shipping on some orders.

If you refund some of the shipping, it is stored as a refund on the shipping. Do you mean you want to access this amount in some other way?

Never mind, I see how it changes the order totals. Would it be too cluttered to also add a New Order Total and New Order Shipping amount so I could see the new amounts at a glance?

It has final order total, I think adding new shipping total would clutter it, it's already looking a bit messy on refunds, I may add it if I redesign it another time.
