I noticed that some sets have extra pieces.
Now on the website I notice that sometimes the amount is for example 6 + 2
Does that mean that there are 2 extra pieces?
An example is Fallingwater 21005

Yes, that's it exactly. Those parts are usually in the set as spares, but not always.
