how can i 'unship' something?

I have an order that I marked as shipped. Well the order came back to me Return to Sender since they had moved. So now I'd like to mark the status as 'Processed' again, and then change it to 'Shipped' again once it actually re-ships to their proper address. However, it does not appear that you can unship an order. I know I've not yet accidentally marked something shipped, but this seems like a really easy thing to do accidentally. Can we change this so we can move backwards in the progress bar if need be?

I had the same issue some time ago, when I mass-updated a status to processing and got in an order that the person hadn't paid yet (IBAN).
